Ingredients:
- ½ cup quinoa (boil in 1 cup of water, or more)
- ½ cup mixed vegetables
- ½ cup fresh broccoli and zucchini
- 1 small onion chopped
- 2 cloves of garlic
- 1 inch of ginger, crushed
- Oil and soy sauce
- 1 egg, beaten (optional*)
- salt , paper and seasonings to taste (optional*)
- Sesame oil (optional*)
Instructions:
- Boil and prepare quinoa in water (until ready)
- Cut all vegetables, and crush garlic and ginger
- Heat pan on medium, add 1 tsp oil
- When hot add crushed ginger, fry for 2 minutes
- Add crushed garlic and onion, fry till onion is cooked
- Add vegetables and fry for 3-4 minutes
- Add in egg (optional) – shift veggies to the side and fry
- Add quinoa, then fry with soy sauce, salt, paper and
seasonings to flavor, including seasons oil (if you wish) - Plate, and garnish with thin cut vegetables (carrots, etc)
